GLUTEN FREE …  Are you seeing this start to appear on food packaging? Take-out options? Facebook groups? Hearing it in commercials and conversations?

A few years ago I’m sure not many people would have had a clue what gluten was and now it seems that gluten intolerance is on the rise everywhere.

Having tried quite a few Gluten Free products myself lately (everything from: Gummy Bears to Teriyaki Sauce to Waffles) I can say so far I’ve been quite impressed and have yet to find anything that didn’t taste just as good as the “regular” brands. Prices are definitely higher though, but it hasn’t been as bad as I expected for most items.

    I too am Celiac and it’s nice to see that more and more people are becoming informed and will truly understand the severity and seriousness of this disease. For those wondering if GF is a new fad diet, it’s not. Going GF is something you should only do once diagnosed as you don’t get the required nutrients you need if you are a healthy person. Don’t cut gluten out unless you are told to.

    Ah, where was all this 20 or so years ago? Have bookmarked links for future reference. When I was preggers with daughter 19 (eek!) years ago, I was both gluten and dairy-free…and still managed to gain 42 pounds eating the healthiest I have ever eaten before or since! Just count me another victim of over-presecription of antibiotics (before anyone knew better) and have paid the price since. Love that smartcanucks includes it all! Yay on you 🙂

    My Mom is Celiac, so I thought I would share this super basic recipe which is always a hit at our house..

    ————-
    Rice pancakes:
    ————-
    -Rice Flour
    -2 eggs
    -1 scoop infant formula (extra nutrition)
    – Milk
    ————
    Mix ingredients together. Should be a relatively runny but thick mixture.
    (you know the point at which you are mixing a cake mix and it gets comfortable? Thats how the texture should be.)
    —-
    Pour in pan. Cook for a few minutes, flip.. And its ready!
